These recipes are so simple and often made out of what ever I have in the cupboards and fridge.
Sweet Potato Curly Fries with Dijon Mustard Guacamole
These are super super simple and they taste absolutely amazing.
These are probably my favourite thing to snack on if I feel in need of chips and dip ... I could go back for more all day long.
Ingredients :
1 large Sweet Potato
1/2 Tablespoon of Coconut Oil
2 Pinches of Salt
2 teaspoons of Dijon mustard
1 Avocado
1teaspoon of Mayonnaise
Method:
Preheat your oven to 180 degrees on fan force
Spirilize your sweet potatoes (if you don't have a spirilizer thinly chopped potatoes work just as well)
and mixx them with melted coconut oil and salt and place on a baking tray and put in oven for 30 mins.
Whilst the chips are in the oven, mash up your avocado and add the mustard a little at a time ( as it could be too spicy for some) and mayonnaise and mix all up.
Eat straight away!!!!

Quinoa Porridge
Quinoa Porridge is really simple to make, but takes a lot longer than regular porridge. Unless you have a lot of time to spar in the morning I suggest that you make this the night before - as it will keep over night.
Ingredients :
1 cup of Quinoa
1 teaspoon of Cinnamon
3 cups of Almond milk
1/3 cup of Water
A drop of Maple essence
2 Table spoons of Maple Syrup
Pinch of Salt
Method:
Put the Quinoa and the cinnamon into a pan, cook until the quinoa starts to pop (it will sound a bit like popping corn), stir a little so that neither burn.
Add the rest of the ingredients and stir.
Bring to the boil and let simmer.
The Quinoa will slowly absorb the liquid and should take approx 40 mins to fully absorb.
You may want to add more water for your desired consistency.
To serve, I tend to add berries, yogurt and nuts, however any fruit tastes good.

Green Salad with Rice Noodles and Pesto
This is my favourite 'go to' lunch. It takes about 5 mins to make and keeps me going for ages, plus it is a super easy way to get all your greens in you!!!
Ingredients:
Rice Noodles - either black or brown
Pesto ( homemade or bought)
Green Salad -
2 handfuls of peas
6 florets of broccoli
2 handfuls of roughly chopped courgettes
2 handfuls of broadbeans
half and avocado
Dressing -
1 tbsp herbmere salt
1 clove of garlic crushed and chopped finely
1 and 1/2 tbsp olive oil
Method:
Boil your rice noodles until cooked through and slightly al dente, once cooked drain the water and mix in a tbsp of pesto.
Boil all of your vegetables at the same time ( as you want them al dente) for approx 5 mins on a medium heat.
Whilst your veg are boiling make your dressing - mix the salt, olive oil and garlic in a cup and once your vegetables are done drain all the water from them and mix in the dressing.
Add avocado to serve.
I always make enough salad for the next day. I also ofter add some chicken to the salad instead of the noodles for some protein especially after the gym.
